The reason why, the name walia ibex given to our family restaurant is to remind
that ethiopia is not onely the country of Lucy (the world's second - oldest fossil)
but also the home to different kinds of endemic animals including walia ibex,
which is one of the most endangered species in the world.
Walia ibex is a member of the goat family and as far is known the walia ibex
had always a restricted range and is found onely in the simien mountain of
northern ethiopia.
Ethiopian cusine
As with its cusine ethiopia lies some what different from the rest of the world.
Vegeterian dishes are popular both by muslims and christians population,
who respect nearly two hundreds fasting days per year.
Chicken,meat,and dairy product are not allowed in fasting time by the christians.
Ingera
Ethiopian cusine is not a cusine with out ingera.Ingera is the ethiopian flat bread
which is made out of teff flour and it is unique to ethiopia for its distinct taste and
texture.The main ingriedent used to make ingera is the tiny iron rich grain called
teff,however in some areas wheat,barley and corn flour are used to combine with
teff.
How to eat ingera
A variety of stews and salads are placed up on the ingera for serving,then a
small piece of ingera are torn and used to grasp the stews and salads for eating.
The ingera under these stews soaks up the juices and flavours of the food ,After
the stews and the salads are gone , this bread is also consumed so ingera is
simultaneously used as food and utensil.
